Roasted Vegetables

Over the weekend I was testing a few more recipes for Robyn with Anna's help. One of them is absolutely perfect for any fall dinner, especially Thanksgiving meal.

Here, the combination of shallots, carrots, parsnips and sweet potatoes is ready to go into a hot oven.

And here is the final product: delicious!

I was totally thinking about picking up some veggies to do this with over the weekend.

So simple yet so delicious! I adore parsnip though they are quite rare in France.

The color combination of the pre-roasted vegetables is absolutely lovely! I feel like it should be my color palette should I ever actually buy my own house :)

I always try to make some sort of mixed roasted vegetables for Thanksgiving. It is such an unexpected choice for everyone. The photos are beautiful.

Pretty close to my last Thanksgiving mix, but I used leeks instead of shallots. And I added beets--talk about color!!
