Breakfast at Home: Pancakes

Last weekend, I was in Savannah and had three breakfasts out: one, two, and three.
Yesterday my breakfast consisted of a can of soup...don't ask...I was too busy watching Nip/Tuck to think about breakfast.

Today I woke up early and tested a recipe for Robyn Webb's new project: vegan cookbook. These are blueberry pancakes with blueberry syrup (and I added a few fresh ones on top). YUM.

What did you all have for breakfast?

Blueberries are so good in the morning, especially in pancakes.

For breakfast I had Quaker's Simple Harvest - vanilla, almond and honey - with some stevia and organic skim milk. I also had Berri-Good herb tea. I would like to say that I fell down at lunch when I toook my son to Backyard Burgers and had a great burger and a chocolate malt, but that would be a lie. It was yummy.

blueberry pancakes are some of my favorites especially for sunday brunch. i had a leftover pork chop, grits, an apple with honey and some earl grey tea (plus two milano cookies). haha i wasn't eating till 7 so this was sort of like breakfast and lunch :)

mmmm those pancakes are gorgeous. I can NEVER get them as fluffy as yours are. Mine come out flat even though I try so hard not to overmix. Nice job you!! But..what's your trick?

Hi Olga! What a wonderful time I've had reading your post on Savannah! We go there every 2-3 years....actually we go to Tybee Island, then frequent Savannah several times during the week! What fun places you've ate at - the only one we've been to is Vinnie's - I'll have to write them down.....2010 is Tybee year!!

These blueberry pancakes look fabulous too....there is nothing like fresh blueberry pancakes!!

LuckyTaste: in this recipe, there were 2 teaspoons of baking powder: maybe that was the trick? Also, the pancakes were cooked covered for 1/2 of the cooking time, and then uncovered once they were flipped over.

I think the trick for fluffier pancakes is to allow batter to sit for a bit before making pancakes - it allows for the leavening to work its magic

Blueberry pancakes are tied with chocolate chip pancakes as my favorite kind of pancakes. Yours look absolutely amazing!

Blueberry pancakes are a favorite at our house. We had our own blueberry bush but moved it last year because it had outgrown its spot............and it didn't make it. I've got to get another one.
