Melon & Mango Cold Soup

Who said soup has to be savory? Why not make a cold summer fruit soup? You can serve it as a first course, dessert or a snack.

I've been neglecting the fact that half of my blog's name is mango. I'm sorry :) Here's a recipe that has mangoes as one of the main ingredients.

Melon & Mango Cold Soup

Ingredients

1/2 melon, peeled, cubed
1 mango, peeled, cubed
4 strawberries (optional)

Directions
1. Puree together melon and mango
2. Optional: separately puree strawberries
3. Pour the melon/mango mixture into a bowl
4. Optional: add some strawberry puree into the soup
5. Enjoy
(Serves 2-4)

Stay tuned to see what else I've made with this mixture!

What a delightful and beautiful dessert! Just the thought of it brightens this gloomy day :) Do you think it will work just as well with mango & peaches? Don't have melons, but this will be a yummy dessert for tonight.
