Eggplant & tomato dip

Last week I posted a recipe for Zucchini Caviar, and some of you reminded me that you can make a similar dip/spread with eggplant. Of course you were absolutely right. As it happened, I had one eggplant sitting in my refrigerator waiting to be used. I decided to roast it for an Eggplant & tomato dip.



A note on roasting an eggplant: you can simply put it in a pre-heated 400 oven (unpeeled!) for about 40 minutes, until it's tender. OR you can go one step further to add a wonderful smoky flavor to your final dish. Here's what I did: put an eggplant directly on top of the flame on your gas stove. Keep turning the eggplant until all the skin has been blackened. Then finish roasting the eggplant in a 400F oven (mine took only 15 minutes). Let the eggplant cool, carefully remove the skin and drain off any liquid that might be inside the eggplant.

Ingredients
1 eggplant, roasted, skin removed
1 tomato, finely diced
2 green onions, chopped
1 garlic clove, microplane-d
salt & pepper to taste
sunflower oil
splash of white vinegar

Directions
1. In a bowl mash the eggplant with a fork.
2. Add tomatoes, green onions and garlic.
3. Season with salt & pepper, and drizzle with sunflower oil and white vinegar.
4. Let the mixture sit in the refrigerator for at least 30 minutes.



You can serve the dip with sliced cucumbers, tortilla chips, or eat it as a side.

This looks delicious! I have to say, I don't make eggplant much since my husband isn't a fan. but when we get it in our CSA box, I usually grill it and eat it (all) myself in salads.

Looks so wonderful and fresh.
My favorite way to cook eggplant is making babaganoush (spelling?)--roasted eggplant dip. Its similar to yours but it would have things like tahini (sesame paste), and lemon and greek yogurt or mayonnaise. Yours is more low fat ;)

This is yummy! And eggplant caviar has always been my favorite since childhood. But when I was little for some reason I liked the store bought one better than homemade :)

You always eat so healthy, which is admirable. This is a good way to switch up eggplant dip.

I have to agree that this looks really yummy! I too don't get to eat eggplant often because Grumpy doesn't care for it.

This dip looks so tasty! I can never think of what to make with eggplant and I'm always so tempted to buy it at the store. And the presentation of the dip is so beautiful! What camera do you use?

Eggplant is one of my new favorites. Never tryed it until recently and I love it.
I roast it with a bunch of cherry tomatoes, mash the whole thing, with salt and pepper, fresh herbs, a bit of pasta water and fresh parmasan cheese over whole wheat noodles.

love that little bowl! and cucumbers are a great idea for those kinds of dip instead of bread!
