Bulgur Salad with Lemony Dressing

As a winner of one of Cookthink's challenges, I received Judith Finlayson's The Complete Whole Grains Cookbook.

Today I decided to try one of the recipes: Bulgur Salad with Lemony Chickpeas and Tomatoes. Below is my varation of the salad:

Ingredients

1/2 cup bulgur soaked in 3/4 cup of water
1 cup white beans
1 cup thinly sliced radishes
1 cup cubed tomatoes
4 white parts of scallions, sliced
2 tablespoons chopped cilantro
1/8 lemon juice
3 tablespoons olive oil
salt & pepper to taste
pinch of cayenne


Look at these radishes!!!!!!!!!!!!!!


Directions

1. Combine the first 6 ingredients in a bowl
2. Whisk the last 4 ingredients together in a small bowl
3. Add the dressing to the bulgur and vegetables; toss; refrigerate (if you have the time) and serve.

Thoughts: I cannot believe my grocery store did not have garbanzo beans! That is why I used white beans. I also subbed cilantro for parsley, and used regular tomatoes instead of cherry tomatoes ($$$ saving). The salad turned out great: fresh vegetables, hardy bulgur, and refreshing lemony dressing. Give it a try!

I've never had bulgur, but I'd love to try. I've been experimenting with new grains and this recipe looks great!
