Grilled Peach Summer Salad

{Update: 7/2/12: I'm entering this recipe in the OXO Cherry Recipe Contest}

If the first thing that pops into your head when I say salad is lettuce, you will be quite surprised by the ingredients in this Grilled Peach Summer Salad.

The entire salad came together randomly, just as many of my recipes do. I saw some peaches on sale at the grocery store. Washington State cherries were also on sale. As were the figs and prosciutto.

My original idea was to do something with figs, procsciutto and blue cheese, but alas my grocery store did not order the figs.

Not to worry. I decided to grill peaches using my panini maker and to mix them with peppery arugula, salty blue cheese, and sweet cherries. I added ribbons of prosciutto and thinly sliced red onions for a bit of a bite.

Ingredients
1 peach, cut in half, pit removed, cut into wedges
5-10 sweet cherries, pitted, halved
2 tablespoons blue cheese, crumbled
2 slices prosciutto, torn into ribbons
small wedge of red onion, thinly sliced
olive oil to drizzle
hand full of arugula


Directions
1. Using a grill or a panini maker, grill your peaches. You can also do it in a pan.
2. Mix arugula with a bit of olive oil, cherries and red onions.
3. Top arugula mixture with crumbled blue cheese, ribbons of prosciutto and grilled peaches.
4. Serve immediately. {You want the heat of the peaches to hit the blue cheese and start to melt it just slightly. Note that there is no need to add salt or pepper to this salad as you get a lot of flavor from blue cheese and prosciutto.}

Love this! It's such a summery combination that I'd never have noticed you were making up for a lack of figs. :)
As it happens, I've got more peaches and cherries than I know what to do with, so I just might have to try this out. I love prosciutto and fruit together.

This is hilarious! This is almost exactly the combo I said I loved on Nikki's peach blog last week! Great minds think alike...clearly! (Um...and cause me to use a lot of exclamation marks.) Way to make use of the panini press.

I have a bottle of white peach vinegar and it has been making me want to make a salad just like this. I made one with arugula, peaches, and almonds, but was too lazy to go out for other things to put in it... cherries and prosciutto would be perfect!

What a great idea, using your panino press to grill these beauties! I bet they were done in no time.

I love grilled peaches -- especially with balsamic vinegar and a dab of Greek yogurt. I'll definitely be throwing some on the ol' grill pan this weekend when I get home from the farmers market.

Yum! This week I've been eating a lot of peaches and blueberries in green salad.. feta cheese is my go-to. I love that you used your panini press for the grill marks. I'm definitely trying that.

As coincidence has it... I had exactly the same salad (and I mean exactly!) last week when my friend was there and we also made the Thai salad!! We had grilled peaches, prosciutto, gorgonzola and saladleaves..lol..

Oh boy - this looks too good. I love how you decided to use your panini maker to grill fruit. That's very MacGyver of you. And I've been obsessing with prosciutto lately. My cholesterol must've increased by about 10 points in the last month alone.
