This dish came about when I realized that although my blog's name is Mango & Tomato, I haven't cooked with these ingredients in a while. To fix this "issue" I came up with Spicy Shrimp with Mango & Tomato Salsa.
Ingredients:
Shrimp
1 tablespoon lemon juice
1 tablespoon sweet chilli sauce
2 garlic cloves "grated" on a microplane
1 cup of peeled and de-veined shrimp
Salsa (I have no idea why formatting is weird)
1 mango, peeled and cubed
1 tomato, cubed
jalapeno pepper (amount depends on how much heat you want), finely chopped
2 tablespoons finely chopped red onion
a squeeze of lemon
1 tablespoon olive oil
salt to taste
cilantro, chopped (to taste)
Directions
1) combine all the "shrimp" ingredients and marinade for 7 minutes
2) combine all the "salsa" ingredients, and set aside
3) heat oil in a pan and cook the shrimp until pink on both sides (do not over cook)
4) serve the shrimp with salsa
