I then remembered a dish my dad makes with soaked matzo, eggs, milk and oil. That was my inspiration for this Tortilla Torta.
Ingredients:
a few hand-fulls of white corn tortillas
hot water
milk
1 tablespoon oil
1/4 small red onion, finely chopped
2 eggs
salt & pepper to taste
1 tablespoon parsley, finely chopped
Directions:
1) soak tortilla chips in 1/2 hot water and 1/2 milk mixture. Press the chips into the liquid and soak for about 5 minutes.
3) squeeze the water/milk mixture from tortilla chips (reserving a few tablespoons of the liquid). Add the soaked tortilla chips to the onion mixture and cook for a few minutes until golden brown.
7) slide the cooked torta on a cutting board, cut into wedges and serve immediately sprinkled with fresh parsley!
Thoughts: I'm quite pleased with how this dish came out. The edges of the torta were crispy thanks to the oil, while the center was soft and moist. The onions definitely added a little bite, and the parsley added a bit of freshness.
Variations: Try different flavors of tortilla chips, or adding some vegetables into the mixture. This is a great idea for brunch.
Yum! Some jalapenos and sharp cheese or queso fresco.
ReplyDeleteKind of reminds me of potato pancakes as well as Matzah Brai (however you spell it). Agreed with Anna you should put a little melted cheese or jalapenos on there. Or maybe just some sour cream with shallots?
ReplyDeleteHow funny that is just what I was thinking that this reminded me of Matzo's and eggs that my Mom used to make fur us all the time when we were kids. This will be a fun one to make and I ditto the suggestions above as far as fun add on's. This is a killer "base" per say one that you could continue to change up and really have fun with.
