Everything but a kitchen sink pancakes

Today in the morning I had about 15 minutes to make breakfast. I decided to use a basic pancake mix, but to spike it up a bit with fresh apples, dried apricots, dried cranberries and pecans. The result is below:

  3. dried fruit in pancakes sounds so great! i usually just make them with blueberries but as much as i love dried apricots and such, i am definitely going to have to try this out!

  6. Thank you everyone for your comments! I'm glad you like this idea: and it's super easy with using a store-bought mix. Also, possibilities are endless by changing up the fruit, nuts, etc.
