Do you love beets? If you do, here is a great idea from Robyn Webb: roasted beet salad with fresh greens (the store did not have arugula), shredded carrots and goat cheese dressing. Really, really good!You could also add nuts, use feta or blue cheese instead of goat cheese, or make a balsamic vinegar dressing.
