Here's what I had for dinner last night: again, one of my let's clean out a fridge/pantry dishes.
Pasta with Broccoli, Chickpeas and Almonds
1) Cook the pasta (I used some little pea-shaped pasta). If you have a steamer, place it on top of the pasta as it cooks to steam the broccoli
2) In a separate pan heat the oil, add garlic and saute for a few minutes. Add chickpeas, and a few minutes later steamed broccoli.
3) Add red pepper flakes, cooked and drained pasta, and cook together for a few minutes.
4) Serve the pasta with vegetables in a bowl garnished with toasted almonds and parsley. If you have Parmesan, go to town!
