Everything but a kitchen sink pancakes

Today in the morning I had about 15 minutes to make breakfast. I decided to use a basic pancake mix, but to spike it up a bit with fresh apples, dried apricots, dried cranberries and pecans. The result is below:

dried fruit in pancakes sounds so great! i usually just make them with blueberries but as much as i love dried apricots and such, i am definitely going to have to try this out!

These look delicious. I love upping the nutritional profile of pancakes by adding fruit, and these look like they're loaded with good stuff!

Thank you everyone for your comments! I'm glad you like this idea: and it's super easy with using a store-bought mix. Also, possibilities are endless by changing up the fruit, nuts, etc.
