What To Do With A Leg Of Lamb: Lamb & Butternut Squash Wonton Ravioli.


Is this another lamb post? Yes, yes it is! This past March I visited Charleston and absolutely LOVED it.  When I was invited to participate in the BB&T Charleston Wine and Food Lambs and Clams Original Recipe Contest for a chance to win tickets to the Charleston Wine & Food Festival, how could I say no?

The first challenge is brought to you by Craig of Border Springs Farm: bone-in leg of lamb. This is not the first time I've had the pleasure of working with the lamb from Craig's farm and I knew this would be quality product. I was correct.


After going back and forth about what to make, I decided to grind the lamb in my mini food processor and make ravioli using wonton wrappers. Special thank you to Sylvie for encouraging me to grind my lamb and to Anna for suggestions for how to bake these ravioli.


Since it is finally getting cooler, I thought I'd have a fall feel to my dish. Since butternut squash screams fall to me and thyme goes well the the butternut squash, I decided to add those two ingredients to the ravioli filling. A few extra flavors, and my recipe was ready to be made!

Lamb & Butternut Squash Wonton Ravioli
Makes about 30 ravioli

Ingredients
1 tablespoon olive oil
1 cup finely diced onion
2 garlic cloves, chopped
2 cups finely diced butternut squash
20 ounces ground lamb (about 3 cups)
salt & pepper
10 thyme sprigs
about 60 wonton wrappers
1 egg
a bit of water
garnish: chili oil, shaved Parmesan cheese, halved red grapes, toasted pecans

Directions
1. Preheat the oven to 400F.
2. Heat a large skillet. Add oil and allow it to heat. Add the onion, garlic and butternut squash and saute for 5 minutes.
3. Add lamb, salt & pepper, thyme sprigs and saute until the lamb is no longer pink. Remove the thyme sprigs.
4. Allow the mixture to cool.



5. On a large surface lay out the wonton wrappers. Top half of the wonton wrappers with the lamb/butternut squash mixture and brush the outside edges with the egg wash (egg+water).
6. Top the lamb mixture with the other half of the wonton wrappers squeezing out as much of the air as possible and making sure to seal the edges of the wrappers very well.
7. Using a biscuit cutter, transform the square wonton ravioli into round ones.
8. Brush the wonton ravioli with the egg wash and bake on a parchment paper topped cookie sheet for fifteen minutes.





9. To serve, add the baked wonton ravioli to a plate, drizzle with the chili oil and top with shaved Parmesan, halved red grapes and toasted pecans.


Ta da!


The baked wonton ravioli were incredibly crispy (in the best way possible) outside, while the inside was still tender and not dry. You can actually eat these with your hands: I did!

If you want to make this dish a bit simpler, skip the wonton wrappers and simply mix the lamb and butternut squash mixture with cooked pasta and then add chili oil, Parmesan cheese, grapes and pecans.


Clearly, I was a fan of the dish ;)

Oatmeal: Love it or Hate it? Oatmeal With Kimchi & Fried Egg


Oatmeal: Love it or Hate it? Personally, I'm not a huge fan...well, unless it's loaded with sweet things like dark chocolate chunks, toasted pecans, dried cherries, etc. But then I might as well eat dessert, right?

Wrong! There is another way to eat a bowl of oatmeal: a savory way! Remember the savory oatmeal with leeks, ginger, and an egg I made a while back? Well, this is its cousin: Oatmeal With Kimchi & Fried Egg.

Oatmeal With Kimchi & Fried Egg
Serves 1

Ingredients
1 cup cooked oatmeal
1/4-1/3 cup kimchi
1 fried egg
1 scallion, thinly sliced
2 teaspoons toasted sesame seeds 
 

Yes, just FIVE ingredients make this gorgeous and flavorful breakfast!


Directions {not that you need them!}

1. In a bowl, add oatmeal.
2. Top with kimchi, fried egg, scallions and sesame seeds.
3. For extra flavor, add a bit of the liquid from the kimchi.


Dig in!!!

Saturday Farmers Market in Madison, WI

Happy Friday! Today instead of a recipe, I bring you Photos from Saturday Farmers Market in Madison, WI. I whisked myself away for a weekend to Madison and had a wonderful time exploring the new to me City, meeting up with a few friends as well as meeting a new one, eating a lot of great food and even trying out the Madison salsa scene, which could use a lot of improvement.

Nutella Sandwich Cookies Recipe: Crazy Good Italian Cookbook by Mike Isabella


Do you love Nutella? Do you love dessert? Do you like cookies? If you've answered yes to all these questions, you are going to LOVE Nutella Sandwich Cookies from Mike Isabella's new cookbook, Mike Isabella's Crazy Good Italian. I received a preview copy of the book and this is the first recipe I made from it.

The book covers everything from a basic tomato sauce recipe to recipes with octopus, oysters, and lamb. It is suitable for anyone from a beginner to an advanced cook. The directions are pretty clear and most of the photography is gorgeous...I say most because I'm not sure how you can make  sea urchin look good ;)

The book includes some of the recipes from Mike's Graffiato restaurant {which I have reviewed}, as well as his updated version of the pepperoni sauce {which I've photographed for WA Post}

But let's get back to the Nutella Sandwich Cookies!

Nutella Sandwich Cookies

Makes 45 to 50 cookie sandwiches

Ingredients

1/2 cup light brown sugar, packed

1/2 cup sugar

1 cup Nutella, plus more for filling

2 sticks unsalted butter, room temperature

2 1/2 cups all-purpose flour, plus more for dusting

2 teaspoons kosher salt

2 teaspoons baking soda

1/4 cup raw sugar

{optional: I used black Hawaiian salt from Marx Foods to sprinkle the cookies.}



Directions


1. Preheat oven to 325 degrees. Have two nonstick baking sheets ready or line baking sheets with parchment paper.

2. In the bowl of a stand mixer fitted with the paddle attachment, mix the brown sugar, sugar and Nutella on the second-lowest speed for 1 minute or until the ingredients are fully incorporated. Add the butter and mix on the third-lowest speed for 2 minutes, or until whipped and light in color.

3. In a separate bowl, whisk together the flour, salt and baking soda. Slowly add the flour mixture to the mixer on the lowest speed setting. Mix all ingredients for 2 minutes, stopping halfway through to scrape down the inside of the mixing bowl to incorporate all the ingredients. The dough will come together and pull away from the sides of the mixing bowl. It will look a little crumbly — that's okay.

4. Dust a work surface and rolling pin with flour to prevent sticking. With your hands, scoop out one-third of the dough and mold it into a small brick on your work surface. Rolling from the center out (north, south, east and west), gently roll the dough into a 1/16-inch thick sheet. Dust the surface of the dough with a little flour before rolling. If the dough starts to tear or stick to the rolling pin, dust with a little more flour.

5. Using a 2-inch ring mold or 2-inch circular cookie cutter, punch out cookies and place them on nonstick or parchment-lined baking sheets.

6. Add some dough from the mixing bowl to what's left over on your work surface and pull it together and roll like you did in Step 4. Punch out more cookies and repeat until all the dough has been used.

7. Placing the cookie sheets on the middle and lower oven racks, bake the cookies for 5 minutes, remove them from the oven, and sprinkle evenly with raw sugar. Put the cookies back in the oven, then rotate the baking sheets 180 degrees and switch the upper and lower cookie sheet positions so they bake evenly for 5 more minutes.

8. Remove the cookies from the oven, let rest on the baking sheet for 1 minute, and use a clean offset spatula to transfer them to a cooling rack.

9. When cooled, fill a piping bag (or Ziploc bag with the corner snipped off) with Nutella. Pipe 1½ teaspoons on the flat surface of half the cookies, and top with the remaining cookies. Refrigerate in a sealed container for 1 hour before serving.








My comments: don't worry if your dough is soft. It will still work, or you can put it in the fridge for a while. Also, I used an offset spatula to spread Nutella instead of piping it.

I only made 1/3rd of the cookies and froze the rest of the dough. Those who received these cookies (me included) really liked them!
