Almond and Cherry Scones: Perfect for Any Meal of the Day


Last month I received a little box from Spice Islands with three of their extracts: almond, vanilla and lemon. The packaging is adorable and I decided to try the Pure Almond Extract first.

But what to make!? Well, I happened to have fresh sweet cherries in my refrigerator and decided to make Almond and Cherry Scones. For some reason, cherries and almonds just seem to go together. I used a recipe from Nick Malgieri's Bake! for Cream Cheese Scones but added a few extras. {Note, in the past I've made Bacon Spinach Tart from the same cookbook.}


I found Nick's recipe for scones not the easiest, so I'm not planning to retype it. What I recommend is that you use YOUR FAVORITE scone recipe and add the following:

1 cup pitted and roughly chopped cherries
1/3 cup slivered almonds
1/2-1 teaspoon of pure almond extract {I added 1/2 teaspoon because I was afraid of overpowering the scones, but think I could have added more}
sugar in the raw to sprinkle on top of the scones before baking




I loved the crunch of the almonds in the scones paired with the bursting juicy red cherries. The almond extract gave an additional fragrant kick. These scones last for a few days and can be frozen.

I made them using heart shaped cookie cutter just to have some cute treats to give to my friends.


Any other ideas for how I can use almond or lemon extract? I'm pretty sure I have vanilla covered ;)
